- 1 small banana
- 2 slices of medium-cut bread of choice
- A handful of berries (blueberries/strawberries/raspberries)
- 1 large egg, preferably free range or organic
- 3 teaspoons brown rice syrup /Sweetener of choice
- 10g Grass- fed Ghee
- 1 tbsp Greek- yogurt
Peel and mash the banana in a bowl. Add the bluberries to the banana mash and bruise them lightly. In a separate bowl crack and whisk the egg along with the brown rice syrup.
Completely soak the bread slices in the sweetened egg mixture. Take the bread out and let the excess egg drip off. Then place it on a plate
Spread the fruit mixture in between the two slice and press down the edges with a spatula to help them stick together.
To cook- place a frying pan on a medium heat. Add ghee to the pan and let it melt. Place the eggy sandwich in the pan and press down with a spatula. Fry for 2 to 3 minutes, check and flip once the bottom turns golden brown. Cook for another 2 to 3 minutes until golden and crisp. Transfer to a plate and serve with a dollop of yogurt and the remaining fruit mixture spooned over the top.
